Preheat the oven to 425 degrees.
In a 9x9 baking dish, slice peaches to desired size, and add 1/4 cup of sugar, lemon juice and cornstarch. Bake for 10 minutes.
While the peaches are baking, sift the flour, 1/2 cup sugar, baking powder and salt. Add butter pieces until the flour mixture has the appearance of a course crumble.
Add the water until a doughy, wet batter forms.
Spoon batter onto peaches and bake for 25 minutes. Crumbly should be lightly browned, and peaches bubbling!
