There is nothing a like a classic "mix wet with dry" ingredients morning muffin recipe. Like other recipes on our site, this one could basically be made entirely with one wooden spoon. It's super simple. One trick: don't overmix your batter. Other than that, these bake beautifully into satisfying breakfast bites and fuller brunch with some eggs (try it with this frittata!). I know that "morning glory muffins" means different things to different people, but for us -- this is our morning sunshine, especially as colder days set in.
Pre-heat your oven to 375 degrees, and line a muffin tray with paper liners.
In a large bowl, mix your dry ingredients together -- the flours, sugar, leaveners, salt, cinnamon, and zest. Then, stir in the dates and chopped nuts.
In a smaller bowl, stir together your wet ingredients -- juice, egg, buttermilk, vanilla, and butter -- until smooth.
